Bacon Apple Smothered Pork Chops Recipe
Michelle Tam’s Nom Nom Paleo Ready or Not! cookbook is by far one of my favorites. In fact, I used it so much that the binding started to fall apart and had to get a new copy! I also tabbed so many pages with Post-It notes so that I can easily go back to make the dish again. I’ve had friends and family taste the dishes, and a lot of them had positive feedback.
One of the dishes that I made from the cookbook is “Bacon Apple Smothered Pork Chop.” I accidentally overcooked the pork chops a little (whoops!), but the flavors of all the ingredients worked well together.
Prep work is incredibly important because you don’t want to start chopping a vegetable or measuring a liquid while you’re cooking. You’d set yourself for cooking disasters, like the food burning or overcooking.
I bought my pork chops from Whole Foods when they were on sale and used them for this recipe. I know that Whole Foods can be expensive, but it’s not bad when you catch a great deal or sale (especially combined with Amazon Prime).
I’m still learning knife skills to this day and envy chefs who chop vegetables faster than I can say “chopping vegetables.”
After all is done, below is the final result. The presentation is a bit different than Michelle Tam’s website since her cookbook had parsley in the recipe while her website does not. The parsley served as a garnish.

I’m not on a Paleo or gluten-free diet, but so many recipes in the cookbook have impressed me. I love the step-by-step images and easy captions. I highly recommend getting Michelle Tam’s Ready or Not! cookbook if you don’t already have it (which can be found here on Amazon). It’s completely worth it!
